Buffalo Hot Wings - Chili Hills Style Recipe

It's time for one of the main barbecue classics - our unique, crispy, chicken wings with phenomenal Buffalo hot sauce! Actually, there is no secret here, there are only quality products from Chilli Hills and Hellmann's.... and that's it.

Buffalo sauce originated in a bar called Ancho in Buffalo, New York. In 1964, the owner of the bar decided to invite some friends over and asked his wife to cook something quickly. However, the only products left in the refrigerator were chicken wings. She decided to fry them and then make some kind of sauce for them. The only sauce she had was their homemade hot sauce with butter, celery and blue cheese. Accordingly, she mixed these products, made a super strong dipping sauce and poured it over the wings. Thus was born the recipe for Buffalo wings, which are one of the most popular ways to serve hot wings all over the world.

Products:

Chicken wings - 6-8 pieces or 1 kg

The marinade for them:

Olive oil - 2 tbsp.

Garlic powder - 3 tbsp. Chilli Hills smoked paprika – 3 tbsp.

Salt and Pepper

For the Buffalo sauce:

Red onion - one head

Butter - 150 g Olive oil - 1 tbsp.

Wine vinegar - 100 ml.

Sugar - 30g.

Hellmann's hot ketchup - 200 ml.

Red Heat Chilli Hills hot sauce – 1 tbsp.

Salt and Pepper

Dipping sauce:

Hellmann's light mayonnaise - 2 tbsp.

Sour cream - 1 tbsp.

Blue cheese - 30 g.

Celery - 30 g.

Method of preparation:

Wash and cut the wings in half, through the cartilage, and pat them dry - this way they fry better and are easier to handle. Season them with olive oil, Chili Hills smoked paprika , garlic powder, black pepper and leave them for 20 - 30 minutes, a few hours or overnight (optional) to absorb the flavors. Fry in a pan with plenty of oil or a deep fryer for 8 - 10 minutes, at 170 degrees.

For our secret, not-so-secret, Buffalo sauce:

Many people think that Buffalo sauce is difficult to make, but it is actually very simple to prepare. Finely chop the red onion and fry it in olive oil until golden brown. Add the wine vinegar and butter, the butter must be completely melted because it is the base of the sauce. Add Hellmann's hot ketchup, brown sugar, Chilli Hills Red Heat hot sauce , salt and pepper.

In the same pan, place the fried wings and stir to coat them with the sauce. Serve with a dipping sauce of Hellmann's mayonnaise, sour cream, grated blue cheese and diced celery, all well mixed.

We also recommend a cold beer. Bon Appetit!
