This chilli is from Central Mexico and along with Ancho and Mulato, is one of the Holy Trinity of Mexican chilli peppers. Pasilla has a mild taste and hints of grapes and cherries mixed with an earthy taste. It’s good to be lightly roasted before rehydrating in boiling water for no more than 20 minutes.
