Chili peppers have a strong aroma and taste, ranging from sweet to burning hot (the reason for the hot taste is the presence in the fruit of the phenolic compound capsaicin, which is many times higher in chili peppers than in regular sweet peppers). Some types of chili peppers are so hot that even touching them can cause skin irritation, so the use of gloves is recommended.

The fruits of hot peppers are used fresh, even unripe, but they can also be cooked or dried – whole or in pieces. When dried, the ripe fruits become darker in color, often from dark to orange-red. Peppers are usually dried in the sun, which causes them to shrivel.

Dry chilies can be stored in a dry place to retain their flavor throughout the winter. You can grate them with or without the seeds and use them in various sauces, seasonings for dishes, salads and pizzas. Finely grated, they turn into hot red pepper. Whole peppers can be used to season soups and dishes.

The unit of measure for the hotness of a chili pepper is the scoville (SHU). The hottest part of the pepper is the skin on the inside.
