Jerk is a Jamaican style of cooking where meat is rubbed with a dry marinade or soaked in a juicy marinade called Jamaican Jerk.
Jerk seasoning is traditionally applied to pork and chicken. Modern recipes also apply the spice to fish, shrimp, shellfish, beef, lamb, and even tofu. This aromatic spice is a blend of mainly allspice and Habanero (Scotch Bonnet) chilies. Other ingredients include cloves, cinnamon, onion, nutmeg, thyme, garlic and salt.
Here is an easy recipe tested by us:
Jerk Chicken /for two portions/
Products for the chicken:
2 chicken breasts
1 lemon
2 tablespoons of olive oil
3 pinches Chilli Hills Jamaican Jerk
1 pinch of salt
Products for the salad:
1/4 fresh cabbage
2 carrots
seed mix
1 dry Habanero pepper
olive oil, white wine vinegar and salt to your taste
The chicken
. in a bowl, mix the juice of one lemon, olive oil, Jerk seasoning and salt
. with a sharp knife, cut the chicken breast into 4 medium-thin fillets
. place the breasts in a saucepan, pour the marinade over them and mix well to soak well
. leave for 15 min to marinate
Heat the grill and bake until done. During the baking process, you can periodically brush them with the rest of the marinade for extra juiciness.
The salad
. chop/shred the cabbage and carrot
. soak the habanero pepper in hot water for 1 min and then chop it
. toast the seeds until crispy
. mix everything together and taste.
Serve with appropriate hot sauce or salsa.
