We offer you a classic Portuguese recipe for gambas. The cooking method could vary a bit depending on the area, but I personally prefer those I tried in Sagres. I added a pinch of chilli for more delight.
Products:
50 ml olive oil
3-4 cloves of garlic
2 chilli peppers optional
1 tea spoon dried Chilli Hills Birdseye peppers
1 and 1/2 tea spoon Chilli Hills Smoked Paprika
100 ml dark rum
50 g salty butter
250 g raw gambas
Parsley
Half of lemon fresh juice
Instructions:
- Heat a saucepan and add some olive oil. Fry the chopped garlic, chilli peppers, dried chilli peppers, smoked paprika and cook until garlic has a golden color.
- Add the rum and reduce it on lower temperature to the half of it. Add the butter and stir until melted.
- Add the gambas, stir everything, add lemon juice and put it in hot oven for 6-7 minutes.
- Get it out, add salt and parsley, serve with good homemade bread.
