It is time for one of the main BBQ classic recipes – our unique crispy, chicken wings with the unique Buffalo hot sauce! In fact there is no secret, but only quality products from Chilli Hills and Hellmann’s….and that’s it.
The Buffalo sauce origins from a bar in Buffalo, near New York, called Ancho. In 1964 the bar owner decides to invite a group of friends and asks his wife to cook something fast, but the only products left in the fridge were chicken wings. She decides to fry them and make some kind of a sauce for them, but the only sauce she has was their homemade spicy sauce, butter, celery and blue cheese. She mixes those products, makes one hell of a dipping sauce and pours it on the wings. That is how the Buffalo Wings recipe, which is one of the most popular way of serving hot wings all over the world, was born.
Products:
Chicken wings – 6-8 pieces or 1 kg
The marinade for them:
Olive oil – 2 tbsp.
Garlic powder – 3 tbsp.
Chilli Hills Smoked Paprika – 3 tbsp.
Salt and Black pepper
For the Buffalo sauce:
One red onion
Butter – 150 g
Olive oil – 1 tbsp.
Wine vinegar – 100 ml.
Sugar – 30g.
Hellmann’s hot ketchup – 200 ml.
Hot sauce Red Heat Chilli Hills – 1 tbsp.
Salt and Black pepper
Dipping sauce:
Hellmann’s light mayonnaise – 2 tbsp.
Sour cream – 1 tbsp.
Blue cheese – 30 g.
Celery – 30 g.
Preparation:
Wash and cut the wings in half, through the cartilage and dry them – this way they will fry better and are easier to cook. We season them with olive oil, Chili Hills Smoked Paprika, garlic powder, black pepper and leave them for 20 – 30 minutes, several hours or all night (optional) to absorb the aromas. Fry in a pot with a lot of oil or a deep fryer for 8 – 10 minutes at 170 degrees.
For our secret, not-so-secret, Buffalo sauce:
Many people think that Buffalo sauce is difficult to make, but it is actually very simple. Finely chop the red onion and fry it in olive oil until golden, add the wine vinegar and butter, the butter must be melt completely because it is the basis of the sauce. Add Hellmann’s hot ketchup, brown sugar, Chilli Hills Red Heat hot sauce, salt and pepper.
In the same pan, put the already fried wings and stir so that the sauce sticks all over them.
Serve with Hellmann’s mayonnaise dipping sauce, sour cream, grated blue cheese and finely diced celery, all tossed well.
